Tomato Basil Caprese Pasta

So I’ve been exercising more recently {#sweatingforthewedding} and noticed that while pasta is the most delicious thing on this plant, it makes me feel somewhat sluggish. Because of this I haven’t been eating it as much. This recipe was my reintroduction to pasta after 2 weeks of abstaining and MAN it was a good choice!

These few simple ingredients came together so perfectly – I thought I was in heaven. Bonus: I didn’t feel super guilty afterwards since its a rather healthy dish. Give it a try! Let me know what you think in the comments.


Ingredients:

  • 20oz cherry tomatoes
  • 10oz miniature mozzarella balls
  • 2 chicken breasts
  • 1-2tbsp tomato paste
  • 1lb pasta
  • basil
  • olive oil
  • salt and pepper

Directions:

Preheat oven to 425°.

Toss tomatoes and chicken breasts in olive oil, salt, and pepper. Bake together at 425° for 20 minutes. Once done, slice or chop chicken however you would like to serve it. Boil pasta according to package directions. Combine cooked pasta, tomato paste, and roasted cherry tomatoes. Serve with mozzarella and chicken, topped with basil.
