Roasted Caribou Strips

New Recipe! And this is by far one of my favorite, most unusual recipes. I’m ashamed to admit it, but even though I’ve been in Alaska for one year I haven’t yet tasted all of the native Alaska cuisine like Caribou {which is a crime really how can I call myself a foodie?!}

Caribou Roast

This. Caribou. Is. Amazing.

I ate it for 3 straight days {lunch and dinner} and still wanted more.

 

Tender strips of game meat dipped in the most amazing marinade and wrapped in bacon! Can we all just take a second and wipe away the drool. Ok, now we’re ready.

 

You could substitute chicken, beef, or pork in place of caribou, but honestly, why would you because this caribou is AMAZING. But if I had to substitute something I would try country style pork ribs for some pork on pork action 😉

Caribou Roast

I served mine with homemade mashed potatoes and green beans. Oh My Gosh. I’m drooling again.


Ingredients:

Overnight Marinade:

  • 1/4 cup vinegar
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1 tbsp brown sugar
  • 1 tbsp dijon mustard
  • 1 tbsp Worcestershire
  • 1 tbsp lemon juice

Roasting Marinade:

  • 1/4 cup Worcestershire
  • 2 tbsp dijon mustard
  • 1 tbsp garlic powder
  • 4 tbsp brown sugar

Other:

  • 2lb caribou strips {average 3″ thick, 6″ long}
  • 1 large onion, thickly sliced
  • 3 large carrots, chopped
  • 12oz bacon
  • flour
  • oil

Directions:

Prepare overnight marinade by mixing all ingredients together in gallon ziplock plastic bag. Place strips in bag and refrigerate overnight up to 24 hours flipping once halfway through.

Preheat oven to 450º.

Remove caribou from marinade and pat dry with paper towels. Coat strips in flour and brown evenly in oil over medium-high heat approximately 3 minutes each side. Continue with directions as caribou strips are browning. Toss carrots and onions in oil and layer in casserole dish. Prepare roasting marinade by mixing all ingredients together in a bowl. After the strips are browned, dip each strip in roasting marinade to coat then wrap in bacon and place in casserole dish over vegetables.

Lower oven to 350º and bake uncovered for 30 minutes. Meat should be done medium or medium-well depending on size of strips.
