Puttanesca Soup with a
Mediterranean Veggie and Hummus Wrap!

◊ Recipe makes 5-6 servings.
Ingredients:
Marinated Mediterranean Veggie Wraps
- 1 cucumber, thinly sliced
- 3-4 Roma tomatoes, thinly sliced
- 1/2 large red onion, thinly sliced
- 6oz chickpeas (garbanzo beans), drained and rinsed
- Hummus (I recommend garlic flavor)
- Mixed greens
- Tortilla wraps
- 1/4 cup red wine vinegar
- 1/4 cup balsamic vinegar
- 1/4 – 1/2 cup olive oil
- 1 tbsp dried oregano
Puttanesca Soup
- 15oz cannellini beans
- 7oz chickpeas (garbanzo beans), drained and rinsed
- 2 cups vegetable broth
- 24oz bruschetta or Italian seasoned diced tomatoes (∇ Easy Bruschetta)
- 1/2 large red onion, thinly sliced
- 7oz grilled artichoke hearts, rough chop
- 3 cloves garlic, large chunky chop
- 2 tbsp capers, drained and rinsed
- Olive oil
- Salt and pepper
- Fresh basil
- Parmesan cheese (vegetarian)
Directions:
Prepare vegetable marinade – combine red wine vinegar, balsamic vinegar, olive oil, and oregano. Taste marinade and adjust to your liking. Pour marinade over sliced cucumbers, red onion, and tomatoes. Set aside to marinade while you prepare soup.
Heat olive oil in large pot over medium heat. Sauté red onion, stirring frequently, until just beginning to soften. Add garlic and heat until fragrant about 30 seconds. Add bruschetta or diced tomatoes and broth. Bring to boil then reduce to simmer. Add cannellini beans, chickpeas, artichokes, and capers – simmer 5 minutes. Salt and pepper to taste.
Assemble wraps. Top tortillas with 2 spoonfuls of hummus, mixed greens, marinated vegetables (shake off excess marinade to avoid making wrap too soggy), handful of chickpeas, and fresh basil if desired.
Serve soup with fresh basil (and parmesan cheese if vegetarian)
