{Healthy} Baked Chicken Taquitos

Do you ever have those days where you come home and realize you’re completely unprepared for dinner. I had one of those days last week. I had forgotten to stop at the store the other night and had none of the ingredients I needed for dinner.

What was I to do? My fiancé talked me down from ordering my body weight in Chinese food. {Who else completely over-orders takeout food when they are hungry? 🙋🏽‍♀️🥡}. Instead I mentally noted all the ingredients I had in the house and needed to use… fat free refriend beans, queso, fat free cheddar cheese, tortillas, chicken…. Bingo! Taquitos!

We’ve been on a fat free kick recently which I’m loving. And after I discovered this fat free cheddar cheese, my whole world has changed. I can put FAT FREE cheese all over anything I want!

This recipe is so quick and simple. The hardest part is waiting for the chicken to boil. It’s also a build your own taquito kind of recipe… by that I mean the measurements/quantities I give are kinda optional. You don’t like refried beans? Add black or pinto beans! You’re a cheese lover? Pile it on! No matter how you style your taquito I know you’ll enjoy them!

Tips and Tricks for this recipe:

  1. Substitute my homemade seasoning blend for a premade taco or fajita seasoning.
  2. Instead of shredded chicken, use pork or beef or go meatless with beans and cheese only!

Ingredients:

  • 2 chicken breasts, boiled and chopped or shredded
  • 1 cup Fat free cheddar cheese
  • 8 flour tortillas, 8″ diameter
  • 1.5 cups Fat free refried beans
  • 1/2 – 1 cup Queso

Seasoning blend:

  • 1 tsp Paprika
  • 1 tsp Cajun seasoning
  • 1 tsp ground Cumin
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1/2 tsp Red pepper flake

Directions:

Preheat oven to 425º.

Combine all ingredients {except tortillas} and mix well. Scoop 2-3 spoonfuls of mixture into each tortilla and roll. Spray each side of the taquitos with non-stick cooking spray. Place on baking sheet, seam side down, and bake for 10 minutes, flipping half way through. Serve with rice, salsa, guacamole, etc.
