Dan Dan Noodles with Crispy Pork

Who doesn’t love a nice bowl of pasta? If you’re looking for that same comfort but with a twist, Dan Dan Noodles with Crispy Pork will make your dreams come true.

Crispy bits of pork soak up a delicious sauce, then are sprinkled over chewy noodles in a spicy peanut sauce. A combination that was meant to be. We made this recipe 3 times in one month – it’s that good!

 

Also, don’t sleep on the crunchy garlic! Last time I was at my local Asian market I bought them out (all 5 jars!) because it is that addicting!

 

∇ Note: Use whatever noodles you like or have on hand. I’ve used Canton (egg) noodles, udon noodles, ramen, and rice noodles. All were delicious, but egg noodles are traditional.

∇∇ Note: Crunchy garlic topping can be hard to find, even in an Asian market. Take a picture with you to help.


Ingredients:

Crispy pork

  • 1lb ground pork
  • Vegetable oil
  • 1.5 tbsp hoisin sauce
  • 1.5 tbsp Chinese black vinegar
  • 3 tsp soy sauce

Noodles and Garnish

  • 16oz noodles∇
  • 1 bunch cilantro, rough chop
  • 1 bunch scallions, thinly sliced
  • 1/4 cup peanuts, crushed
  • Crunchy garlic topping∇∇

Sauce:

  • 1/2 cup smooth peanut butter
  • 1/4 cup water
  • 5 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tsp ground ginger
  • 1-2 tsp chili oil
  • 2 tbsp honey
  • 1.5 tbsp sesame oil
  • 1.5 tbsp Chinese black vinegar

Directions:

Cook pork in nonstick skillet over high heat, crumbling and breaking apart as it cooks. Once the fat has evaporated from the pan and the pork is almost cooked through, add about 2-3 tbsp of vegetable oil. Cook on medium-high heat allowing pork to crisp and become a deep golden brown color, stirring occasionally. While pork is cooking, mix hoisin, vinegar, and soy sauce. Once pork is a golden brown, lower heat to medium-low and add sauce. Stir to coat. Allow to simmer 2 minutes while pork soaks up the sauce. Remove from heat.

Cook ∇noodles according to package directions.

While noodles are cooking mix together all sauce ingredients. Set aside.

Toss cooked noodles in sauce. Top with crispy pork, scallions, cilantro, and chopped peanuts.

∇∇Crunchy garlic topping is optional (but delicious and totally recommended)!
