Almond Milk Eggnog

Believe it or not, I’ve never tried eggnog before! This was a great first recipe to start. I’ve used Rumchata with my recipe which does contain some dairy. Please, substitute for whisky, rum, or bourbon instead.


Ingredients:

  • 3 large eggs
  • 3/4 – 1 cup granulated sugar
  • 2 1/2 cups unsweetened almond milk
  • 1-2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup brandy
  • 1 cup rumchata* 
  • Cinnamon sticks for garnish

*Dairy Free – substitute for whisky, bourbon, or rum.


Directions:

Whisk eggs and sugar together, then whisk in almond milk until smooth. Heat on low-medium heat while whisking nearly continuously for 10 minutes. Do NOT allow to boil. Remove from heat. Add vanilla, cinnamon, and nutmeg. *Wait until cool* (see optional note). Stir in brandy and rumchata to taste. Let sit in refrigerator in an airtight container for 1-2 days to develop flavors. Serve with a cinnamon stick to garnish.

*OPTIONAL: Pour mixture into a medium sized stainless steel or glass bowl then fill a second large stainless steel or glass bowl (larger than the first) with ice and a little cold water. Place the medium bowl inside the large so it is partially surrounded by ice water. Don’t let the water dilute your mixture! Whisk continuously for 3-5 minutes until cool.
